A few months ago, I posted my Healthy Strawberry Cheesecake Soft Serve. I used cashews to achieve a cheesecake like flavor in that recipe. Do you know what I love even more than Strawberry Cheesecake? LEMON CHEESECAKE. Seriously, lemon desserts are my favorite. Whenever I follow a lemony recipe, I usually end up adding twice as much lemon than it calls for.
last weekend, I treated myself to some new silicone popcicle molds. I really love this set. it comes with a book of really awesome healthy recipes. If you don’t use this popcicle set, I would for sure, invest in silicone popcicle molds for summer. The popcicles just pop out. It’s so easy.
This recipe has only 4 ingredients, no added sugar and is vegan. I have started using Ground Vanilla Bean Powder in my smoothies and frozen treats. I serve these to my two toddler boys, so I like my vanilla alcohol-free. You can also use pure vanilla extract too. You will want to make sure you soak the cashews for at least an hour before throwing this together.
- 1 Lemon- Juice and Zest
- 2 Bananas
- 1/3 cup of soaked cashews
- 1/2 teaspoon ground vanilla or pure vanilla extract
- In your blender. Blend all of the ingredients together. try to get as much lemon zest into the mixture as you can. pour the mixture into popcicle molds and freeze for at least 2 hours. take out of the freezer and enjoy,
These turned out so good. I love the taste of lemon so much. I am sure that adding any type of berry to this would also be delicious.
