Frequently, when I post a recipe, I will type this.
” And my kids gobbled it up.”
That did not happen this time, as both of my kiddos, wrinkled their noses and threw their cucumber noodles on the floor.
But I thought this salad was Delicious!
I had low expectations for cucumber noodles, and I actually thought that they turned out wonderfully. I tossed the noodles with a calamondin vinaigrette. Don’t know where to purchase Calamondins? Check out the Calamondin Cafe.
My mom bought me this fancy vegetable spirilizer, and I finally got it out. I have spirilizd everything in my kitchen, and I have actually had a few recipes disasters. 🙂 But some of my creations have turned out really well. I can’t tell you how fun this is!
I think that adding anything you would usually add to a pasta salad would go well with these cucumber noodles. Tomatoes, olives, peppers, and your favorite dressing. The cucumber noodles actually take quite well to a vinaigrette.
I also whipped up this WONDERFUL calamondin vinaigrette to go with these noodles. I seriously think that the simplest dressings always taste best. This was a wonderful, fresh, crunchy and citrusy salad to enjoy on this cold winter day. Reminds me of summer. We will be there soon folks 🙂 We will be there soon.
- 2 tablespoons Olive Oil
- 1/4 cup of apple cider viniger
- 2 pinches of salt and pepper mixture or your favorite seasoning
- the juice of 4 calamondins
- 1 teeny pinch of sugar
- Mix all the ingredients together in a cup or salad dressing container. Shake well before tossing with salad.
