I have Hid vegetables, Fibbed about what was in his Mac and Cheese, researched on how to sneak vegetables, baked vegetables into cookies, AND even presented roasted cauliflower as ” ketchup Dippers”. 🙂
As I was making dinner tonight, I saw 2 large zucchini staring me in the face. Now How can I prepare these in a way that he ( 2 1/2 year old) will eat them? Oh right. Make them into Nuggets and Dip them in ketchup. I have done worse. 🙂
These little babies were SUPER easy to make. I simply made my Tuna Patty recipe ( a recipe I haven’t posted yet). And instead of tuna, I added zucchini instead. AND Corn. These are easy, You don’t need to fry these either. You BAKE them in the oven.
Zucchini Nuggets Best when served with ketchup for the under 5 crowd. Grown ups might want to try dipping in Salsa!
1. IN A BOWL Shred 2 whole zucchini. ADD 2 cups of Panko breadcrumbs, 1 cup of cooked frozen corn, 2 eggs and your favorite seasoning.
2 USING A COOKIE SCOOP or spoon. Make 1 inch nuggets and place them on a Baking sheet.
And I promise they will gobble them up and ask for more!
