Baked Egg Zucchini Cups



I know I mentioned in my last post that my in-laws came last weekend and brought goodies from their vegetable garden.   Well We were presented with some FANTASTIC looking zucchini.  For those of you who know me, or at least read my posts, you know that I LOVE zucchini!

Here is the thing.  I love to cook, and I cook many things very well.  BUT I am a little embarrassed to say that I am not great at cooking eggs.

I Know!

But seriously, besides scrambled, I really don’t know how to cook eggs properly, and my scrambled eggs are ok at best.  If I were to ever enter one of those cooking competitions like the ones on T.V I would totally get kicked off in the first round.


So I have been practicing.

You know the pretty dishes you see on Pinterest with a pretty egg on top?  You know the ones.  so My husband is coming home to random eggs baked on things.

And REALLY!  The outcomes  are too embarrassing to put on this blog!



It turns out that baking an egg in a zucchini cup is fool-proof!  Simply cut a zucchini into 2 inch segments. and scoop out the filling. ( but don’t be wasteful. use the filling for something else).  And brush it with olive oil, salt and pepper.  ( or a seasoning of your choice)



Then crack an egg into your zucchini cup!  Bake at 350 degrees for about 25 minutes.  or until you get the consistency you like.  ( keep poking the egg with a toothpick so you can see what is going on)



Remember to eat with a piece of toast so you can dip it in the egg runny

This is not the first time I have made a zucchini cup.  I made Zucchini pizza cups last year.    I also made Cucumber Dip cups.   last fall.

Serving food creatively in a cup is an adorable way to serve food at a get together or party.  These Baked Egg Zucchini cups would be totally adorable for a brunch!
