Spicy Acorn Squash Rings

Well before I start, I should apologize for these horrible photos.  I gets dark about 4:30 lately, and when I take photos after that time, the lighting is off.  It seems silly to start preparing dinner earlier just so I can take pictures.

A few weeks ago, after Halloween, my husband, son and I took a trip to a local family owned pumpkin farm.  They also had squash.  We came home with a large abundance of it!  And since it was really the end of the pumpkin season, it was all extremely well priced.

I often make squash for my baby boy.  I know he will ALWAYS eat it.   One night, I decided to try something different with this.  I created Spicy Squash Rings.

Spicy Acorn Squash Rings 

Ingredients  

1 acorn squash

1 tablespoon brown sugar

1 tablespoon olive oil 

Red pepper flakes. As many as you prefer! 

1) Cut the top off of your acorn squash and scoop all the seeds out. 

2) Slice your acorn squash into rings 

3) Sprinkle with brown sugar, olive oil and red pepper flakes.  As you can see, I applied a generous amount of Red Pepper Flakes 

4) Roast in the oven for 20-25 minutes.  When I roast vegetables I prefer them to be caramelized and almost burnt looking.

A few in the second row there, did get a little too burnt.  However, I still ate them.

My husband and I gobbled these up!  I had to accompany mine with a glass of milk!  Perhaps next time I won’t spice them up too much!
