Laughing Cow Cheese Con Queso

What if I told you that you could have a big bowl of hot and cheesy dip and 30 crunchy chips for dipping.  AND the whole thing would be less then 200 calories?

WHAT?

Why yes, I made it happen.  Over the summer, I enjoyed this guilt free and  wonderful snack often.  When my mom came for a visit to help me prepare for Thanksgiving, I made this for her as part of our lunch on day.

It’s so wonderful that food companies have been coming out with products to help us eat healthier.

Have you ever heard of cracker chips?  They are a new cracker that special K has come out with. Cracker chips are a GREAT find.  I am not even getting paid by special K to write this. I am just a HUGE cracker chip fan!  You can eat 30 chips for about 100 calories.  And don’t even get me started on laughing cow cheese. I add it to recipes ALL the time.  Its a great ingredient to make any dish cheesy!

Laughing Cow Cheese Con Queso. 

Ingredients. ( serves 2) 

1 cup of salsa = 50 calories

3 wedges of laughing cow cheese = 105 calories

60 cracker chips ( remember this is for 2 people) = 220 calories

Lets add this all up.  375 calories.  AND this is supposed to serve 2!

1) In a microwave safe bowl add salsa and 3 wedges of laughing cow cheese

2) Nuc in the microwave for 2 minutes.  

3) When It’s finished warming. Stir.  

And your done!  Just place on a pretty plate and add chips.  About 30 per person. OR if you want this whole thing yourself. THATS OK TOO!!!

My brother asked me to make this concoction for him to try as well.  This is a great snack to make when you just feel like snacking, but don’t want to feel bad about it.
